Vegetable and medicinal herb garden
We produce most of our food directly on the farm, with our vegetable garden offering seasonal produce year-round. We're dedicated to preserving local varieties that capture the flavors of the past, such as lettuce, tomatoes, aubergines, and more. To protect our crops from pests, we rely on strategic plant associations, incorporating aromatic plants and trap crops like nasturtiums and tagetes to naturally repel unwanted insects.
In addition, we have created a medicinal garden, inspired by the ancient monastic gardens that served as living pharmacies.
This garden contains over 350 species of healing, soothing, and invigorating plants, which are used in our foods, infusions, lotions, and balms.
The fruit tree forest
In 2020, we launched our 'Fruit Tree Forest' project, planting over 50 varieties of fruit trees. This initiative is designed to mimic the characteristics of a natural forest, fostering soil fertility through a synergy between species.
We have old varieties such as Pero de Ronda and Manzana Reinetas, alongside peaches, apricots, pears, figs, and more, enriching our farm’s biodiversity.
Olive and almond production
Our olives are harvested by hand and pressed in our olive mill within hours, yielding approximately 800 liters of extra virgin olive oil each year.
We also harvest hundreds of kilos of almonds, which are used to produce almond milk, almond oil, and for direct consumption.
